Artichokes are also a natural diuretic which means they are able to help flush the body of edema and reduce bloating and overall water retention. They are a good source of folate, vitamin C, vitamin K, B-complex, potassium, iron, and antioxidants such as anthocyanins, quercertin, rutin, cynarin, luteolin and silymarin.

Silymarin is highly beneficial for the liver and has been shown to regenerate liver tissue making them a great food for those suffering with liver problems or those trying to cleanse and detox the body. Artichokes are an amazing food for the liver and have many undiscovered properties that support liver health. To find out more, check out the book Liver Rescue. Artichokes also contain a compound called inulin which provides nutrition to the good health promoting bacteria in the intestinal tract.

This inulin also has been shown to help balance and stabilize blood glucose levels making them an excellent choice for diabetics. Artichokes are also known to aid digestion and improve gallbladder function which makes them good for those suffering with Irritable Bowel Syndrome (IBS) or other digestive ailments. Artichoke leaves contain compounds that can reduce cholesterol by inhibiting HMG-CoA reductase, this means they have the ability to raise good cholesterol (HDL) and lower bad cholesterol (LDL).

This ability also helps to prevent excessive fatty deposits in the liver and blood which protects the body from arteriosclerosis. Artichoke leaf extract has been shown to kill off cancer cells and protect the liver from oxidative stress. Artichoke leaf extract is readily available in capsule form and can be found online or at your local health food store.

Fresh steamed artichokes have a rich, nutty flavor that make them a delicious, satisfying, and guilt-free food. Try steaming 4-6 artichokes for 45min-1hr. Once cooled, the leaves can be peeled off and the heart can be scooped out. Place each portion in a ziploc bag and store in the fridge. This way you can have a healthy, nutritious, and low fat snack ready to eat right out of the fridge and on the go for you and your family all week long.

Steamed Artichokes with Two Dipping Sauces

Steamed Artichokes with Two Dipping Sauces

Artichokes are one of the most healing vegetables on this planet. When steamed, they retain most of their nutrients and make a delicious and healing snack or meal. In this recipe, you’ll find two tasty options to enjoy with your artichokes: Mustard Maple Dipping Sauce and Zucchini Herb Dipping Sauce. This recipe comes from the Revised and Expanded Edition of Medical Medium.

Artichokes contain phytochemical compounds that stop the growth of tumors and cysts inside the liver. The liver relies on other chemical compounds found in artichokes for many of its own chemical functions—they work hand in hand to keep the liver’s neutralization, screening, and filtering abilities strong.

Steamed Artichokes with Two Dipping Sauces

Ingredients:

  • 4 artichokes
  • 1 lemon, cut in half

MUSTARD MAPLE DIPPING SAUCE

  • 2 tablespoons pure maple syrup
  • 2 1/2 tablespoons lemon juice
  • 1 tablespoon water
  • 1/2 teaspoon mustard powder
  • 1/2 teaspoon cayenne
  • 1/2 teaspoon fresh thyme leaves
  • 1 teaspoon finely chopped parsley

ZUCCHINI HERB DIPPING SAUCE

  • 1 1/2 cups chopped zucchini
  • 1 tablespoon lemon juice
  • 2 teaspoons raw honey
  • 1 teaspoon onion powder
  • 1/2 garlic clove
  • 3 to 4 tablespoons water
  • 1/4 cup loosely packed herbs, such as dill, parsley, thyme, and/or chives

Directions:

To prepare the artichokes, use a knife to carefully slice off the top quarter of each artichoke as well as the end of each stem. Use scissors to cut off the tips of the artichoke leaves to remove the thorns. Rub the whole artichoke immediately with the cut lemon.

Place a steaming basket in a large pot filled with water until it reaches the basket. Place the prepared artichokes in the basket and cover. Bring to a boil and steam until the artichoke leaves can be removed by gently pulling. This should take about 30 to 40 minutes depending on the size of the artichokes.

To make the Mustard Maple Dipping Sauce, whisk together all the ingredients in a small bowl. Serve immediately.

To make the Zucchini Herb Dipping Sauce, combine all the ingredients in a blender and blend until smooth. Serve immediately.

Once the artichokes have slightly cooled, peel off the leaves, dip them in your dressings, and nibble the “meat” from the base of each leaf. Next, scrape off the choke from each artichoke and enjoy the hearts.

Tips:

When you’re choosing between water and Healing Broth for the ingredients, keep in mind that the broth will produce a richer flavor. Store-bought vegetable stock isn’t called for because it’s very difficult to find a variety that’s free of oil, salt, natural flavors, and/or other additives. For convenience, make a batch of Healing Broth in advance and freeze it (consider ice cube trays for easy thawing) so you have it on hand for recipes like this.
